Butternut Squash and Aubergine Stew

CANNELLINI BEAN AND CORN SOUP

Creamy, but WITH NO CREAAAAAM. I’ve always found it difficult to find good soup recipes without the added heaviness of creams and butter, but in this case you can still achieve such a texture without having to surrender. You might think almond milk … weird … but so yummy you’re gonna want to eat the bowl too! This is great eaten straight away but even better when left until the next day.

SERVES 4-6

1 tbsp olive oil or coconut oil

4 garlic cloves, peeled and crushed

150g white onion, finely chopped

4–5 celery sticks (about 100g), chopped

1 bay leaf

60ml white wine (optional)

200g potatoes, peeled and cut into 2.5cm cubes

500ml vegetable stock

200ml unsweetened almond milk

1 x 400g tin cannellini beans

2 corn-on-the-cobs, kernels removed (about 150g)

salt and freshly ground black pepper

flat or curly parsley leaves, chopped, to garnish

slice of homemade bread or Everything Crackers (see here), to serve
