Carrot Beet Salad with Balsamic Honey Dressing

Ingredients

2 cups carrots, shredded

1 cup beets, shredded

Dressing:

2 tablespoons olive oil

1 teaspoon balsamic vinegar

1 ½ teaspoons honey

½ teaspoon dried chives

½ teaspoon dried basil

Directions

With a potato peeler, remove the outer skins from the carrots and beets. Cut the carrots and beets into small pieces and put in a food processor to shred. If you don’t have a food processor, grate the vegetables with a hand grater.
