Mustard Chicken Paillards

This simple method of cooking chicken can also be used with pork chops and fish fillets, if you aren’t allergic to fish.

Serves 4

4 boneless, skinless chicken breasts

3 tablespoons gluten-free mustard

1⁄2 teaspoon dried thyme leaves

1⁄4 cup vegan soy yogurt

1 tablespoon lemon juice

Preheat broiler. Place chicken breasts, smooth-side down, between two sheets of waxed paper. Using a meat mallet or rolling pin, gently pound from the center out, until chicken is 1⁄4" thick.

Carefully place chicken, smooth-side down, on broiler pan. Broil 6" from heat 3 minutes, then turn with a spatula.

While chicken is broiling, combine remaining ingredients in small bowl. Spoon mixture over the chicken after it has been turned. Broil 2–4 minutes longer, or until mustard mixture has brown spots and chicken is thoroughly cooked. Serve immediately.
