Rice Pudding with Whipped Cream
Ingredients
2 teaspoons unflavored gelatin
¼ cup cold water
1 cup cooked rice
⅓ cup sugar
½ cup blanched, slivered almonds (optional)
1 pint heavy cream, whipped
2 teaspoons vanilla
Directions (Serves 10)
Soak gelatin in cold water about 5 minutes. Heat to dissolve gelatin. (Heating the gelatin after it has soaked helps to gel the final mixture.)
Add rice to above mixture and blend well. Chill.
Fold in remaining ingredients. Pour into wet mold and thoroughly chill. Unmold and serve with crushed, sweetened strawberries or raspberries, or Butterscotch Sauce. (See Dessert Sauces section.)
To unmold gelatin molds, put them in hot water for a second, and then cut around the inside of the mold with a sharp knife. Shake out over serving dish.
