Processed Foods and Insulin Resistance

The refined grains and sugars in processed foods create problems with glucose tolerance. In whole foods, starches are complex and your body has to break them down to turn them into the glucose your body needs. The process takes a while, which is the way your body was made to work.

In contrast, refined grains and sugars are already broken down. Zap, and your body has absorbed them with lightning speed. (This is where the phrase “sugar rush” comes from.)

When refined grains and sugars enter your system, your blood and cells are almost instantly swamped with glucose. Your body thinks “Emergency!” and insulin sweeps in to mop up the glucose, which it gets rid of by turning it into fat.

The process is particularly bad for us if we do it over and over again by eating highly processed and refined breakfasts, lunches, dinners, snacks, and drinks. Over time, our bodies stop responding to insulin, leading to a condition called insulin resistance. Insulin resistance, in turn, leads to metabolic syndrome—and unchecked and silent inflammation.
