Brazilian-style Rabbit

Citrus: bitter orange

1 rabbit, jointed

2 tablespoons all-purpose flour

2 tablespoons oil

1 cup chicken broth (see [>])

1 bitter orange, rind grated, juice squeezed

2 small hot green chilies, seeded and chopped

2 tomatoes, skinned, seeded, and chopped

2 tablespoons minced parsley

½ teaspoon ground ginger

Dust the rabbit pieces with the flour. Heat the oil in a deep pan and fry the rabbit until it is browned all over, turning frequently. Add the remaining ingredients and bring the liquid to a boil. Cover the pan, reduce the heat, and simmer until the rabbit is tender, about 1 hour.

Makes 4 servings.
