Method

Preheat the oven to moderate (180°C). Grease a 20-cm square cake pan and line the base with greaseproof paper.

Sift the flour and custard powder into a large mixing bowl. Stir in the sugar. Add the eggs, milk, butter and vanilla and, using an electric mixer at medium speed, beat for 10 minutes.

Pour the batter into the prepared pan and bake for 75 minutes, or until golden and firm to the touch.

Turn out onto a wire rack covered with a clean tea towel and allow to cool.

The cake is traditionally served un-iced, but you might like to try lemon or orange icing when serving it at home.

Take time to line the pan properly if you are planning to enter it in a show.

It is easy to overcook the cake. Keep a close eye on your oven.
