Red Wine Poached Salmon
Prep time: 15 minutes | Cook time: 11 minutes | Serves: 4
Ingredients:

2 celery stalks, chopped
5 thyme sprigs
4 salmon fillets
2 tbsp freshly chopped parsley to garnish
Items from your pantry:
2 tbsp red wine vinegar
2 cups dry red wine
1 cup water
1 tbsp sugar
Salt and freshly ground black pepper to taste
Instructions:
In the inner pot, mix the celery, thyme, vinegar, red wine, water, sugar, salt, and black pepper. Place the fish in the liquid.
Cover with the Pressure Lid and lock the vent to Seal. Select Steam, adjust to High, and set the time to 3 minutes. Select Start/Stop to begin cooking.
After cooking, perform a quick pressure release and carefully open the lid.
Use tongs, to carefully remove the fish onto serving plates and set aside.
Select Sear/Sauté on the pot and set to Medium High. Choose Start/Stop to continue cooking the sauce until thickened, 5 to 8 minutes.
Spoon the sauce over the salmon, garnish with the parsley and serve warm.
