Bring the water to a rolling boil in a small saucepot.

Add the oats and lower the heat to medium-low. Cook for 7 minutes, stirring constantly. Turn off the heat.

Add the almond milk and pumpkin pie spice. Stir to combine.

Serve with the currants, coconut and blueberries, if desired.
