16 – Cauliflower Potatoes

These mashed cauliflower potatoes are seasoned with fresh rosemary and roasted garlic. They make a wonderfully light and fluffy side dish.

Makes 6 Servings

Cooking + Prep Time: 1 hour & 5 minutes

Ingredients:

3 to 4 roasted garlic cloves

2 lbs. of potatoes

1 head of cauliflower – break in several large-sized pieces

1 tbsp. of rosemary, minced

4 to 6 tbsp. of butter or olive oil

Salt and pepper, as desired

Instructions:

Preheat the oven to 350°F.

Bake garlic cloves with oil. Salt as desired. Bake in 350°F oven for 15-17 minutes till soft.

Add salt as desired to water and bring to boil in a large-sized pot. Add cauliflower and potatoes. Boil till they are knife-tender. This takes about 15-18 minutes for cauliflower and 25-30 minutes for potatoes.

Puree roasted garlic and cauliflower in a food processor, along with 2 tbsp. oil, the rosemary, and several pinches of kosher salt & ground pepper.

When potatoes have softened, remove from pot. Peel and mash. Add 2 additional tbsp. of oil. Stir pureed cauliflower into a bowl with potatoes. Stir till creamy and smooth. Season as desired. Serve while hot.
