18 â Salt Cod Cakes
This dish uses salt cod, not regular cod. Youâll find it worth your time to seek out salt cod. The saltiness brings out new dimensions in flavor.
Makes 6 Servings
Cooking + Prep Time: 1 hour + 8 hours refrigeration time
Ingredients: ⢠1 lb. of cod fish, salted
⢠2 large peeled, cubed potatoes
⢠1 tsp. of seasoning, seafood
⢠Ground pepper, as desired
⢠1/2 cup of fresh parsley, chopped
⢠2 beaten eggs, large
⢠1 chopped onion, large
⢠1/2 cup of flour, all-purpose
⢠To fry: 1/4 cup of oil, olive
Instructions: 1. Place cod in bowl. Cover using cold tap water and place in refrigerator for eight hours. Pour water off replace using fresh water after each two-hours. After eight hours, rinse cod in cold tap water. Slice into 3â pieces.
2. Place potatoes and cod in large sized pot. Cover with tap water. Bring to boil on high and reduce to med-low. Cover pot. Simmer till cod is flaking easily and potatoes have become tender. Drain. Allow them to cool for about 10 minutes.
3. Place cod and potatoes in medium bowl. Then season using ground pepper, parsley and seafood seasoning. Mash with potato masher.
4. Add and stir onion and eggs till combined evenly. You should still see pieces of potatoes and cod in mixture.
5. Form mixture into pieces the size of golf balls. Roll them in flour. Press in palms and slightly flatten.
6. Heat oil in skillet on med-high. Cook cod cakes in small batches till all are crispy and golden on each side. Drain on plate lined with paper towels and serve.
