BBQ Apple Cheddar Quesadillas

Walnuts Greek Yogurt

I’m convinced that the act of dipping in sauce significantly raises the likelihood of everyone in the family loving the meal. This dish is no exception. The barbecue-Greek yogurt dipping sauce is to-die-for, and the perfect tang for the apple Cheddar quesadillas.

FOR SAUCE:

1/4 cup (60 g) Greek yogurt

1/4 cup (60 g) barbecue sauce

FOR QUESADILLAS:

4 tortillas, each buttered on one side

1 cup (120 g) shredded Cheddar cheese

1 apple, peeled, cored, and sliced

4 slices cooked turkey bacon, torn into chunks

1/2 cup (60 g) coarsely chopped walnuts

To make the sauce: Combine both of the sauce ingredients in a small bowl.

To make the quesadillas: On each of 2 tortillas, place a large handful of cheese, a few apple slices, 2 slices of the bacon, and 1/4 cup (30 g) of the walnuts, and then top with another tortilla.

Carefully transfer to a skillet set over medium heat (or assemble directly in the pan) and cook (on both buttered sides) until the tortilla is golden brown and the cheese is melted. Slice into triangles. Serve hot with the dipping sauce.

YIELD: 2 QUESADILLAS
