• This simple but flavorful one-pan scramble will be your go-to on busy mornings! Try a mix of colored grape tomatoes for an eye-pleasing look.

1 tsp. olive oil, divided (or cooking spray)

1 small shallot, sliced

4 cups baby spinach

3 large eggs, beaten

2 Tbsp. crumbled feta cheese

1 cup grape or cherry tomatoes, halved
