Heat the olive oil in a large pot then cook in it the ginger for 2 min.

Add in the mushroom with 1 tablespoon of water and cook them for 5 min then stir in 7 cups of broth, soy sauce and the rest of the water.

Bring them to a boil and whisk the cornstarch with the rest cup of broth in a small bowl until no lumps are found then stir it into the pot.

Pour the beaten eggs into the pot while stirring slowly then cook them for 5 min until the soup thickens.

Adjust the seasoning of the soup and stir into it the noodles then cook it for 2 min.

Serve your soup right away and enjoy.
