To this day, I’m not sure what made me think to add those blueberries. I just found myself reaching into the freezer, pulling out a bag, and kneading the berries into the batter until it turned blue. I think the skillet made me do it.
I glanced at the clock, realized I was running out of time, and decided to press the entire blue ball of dough into the frying pan to make one large pancake. In my rush, I accidentally burned the pancake on both sides.
No worries, I thought as I added powdered sugar to cover the burn marks, topped it off with frozen blueberry garnish, and rushed lunch to the table just as the doorbell rang. I opened the door and escorted my future husband to the table.
Oh, the meal that was waiting for him!
His eyes lit up when he saw the giant powdered-sugared delicacy I had set on the table. He put his napkin in his lap, reached for his fork in anticipation, and dug into his lunch. Without warning, rivers of blue goo spilled onto his plate from the epicenter of that undercooked, yet oddly overcooked blueberry pancake.
My eyes widened, and I tried desperately not to burst into tears.
He glanced at me, took a deep breath, and scooped up the chunks of blue goo and powdered sugar. Without flinching, he shoved a forkful of pancake into his mouth between gritted teeth and chewed it manfully. I couldn’t help but notice the painful grin on his face, as if he were a contestant on Survivor trying to win blankets and fire-starting equipment.
He swallowed, guzzled a gulp of orange juice, put down his fork, and never took another bite. Instead, he distracted me with his twinkly brown eyes and funny stories about work as we ignored the blue goo oozing onto the plate between us.
Somehow, despite smashed blueberries and burned flapjacks, our relationship managed to survive. Denton married me a little over a year later, knowing all about my cooking skills.
Or lack thereof.
As for that pancake? It sealed my cooking fate. I never really wanted to experiment in the kitchen again. I mean, I tried to cook. Truly. But recipes and kitchens intimidated me.
Especially kitchens that took three months to renovate.
