This recipe uses a slow cooker to do most of the work for you. It’s a healthy vegetarian dish that is brightened up with some herbed yogurt.

Makes 8 Servings

Cooking + Prep Time: 35 minutes + 8 hours slow cooker time

Ingredients:

4 cups of peeled, 1”-cubed squash, winter

1 cup of rinsed lentils, red

1/2 cup of rinsed pigeon peas, split (toor dal)

1/3 cup of millet

1 tbsp. of chili powder

2 tsp. of coriander, ground

1 1/2 tsp. of salt, kosher

1 tsp. of cumin, ground

1/2 tsp. of turmeric, ground

1/2 tsp. of pepper, ground

5 cups of water, filtered

2 tbsp. of oil, canola

15 curry leaves, fresh

1 tsp. of seeds, cumin

1 tsp. of mustard seeds, brown or black

2 cups of corn kernels, frozen or fresh

To garnish: cilantro, fresh
