These little cheesy tomato skewers use mozzarella, although you could experiment with other varieties, such as goat’s cheese or even a harder cheese. They will make an interesting starter or another unusual party snack. Once the preparation is done, they only take minutes to cook.
You will need: Serves 4
12 cherry tomatoes, halved
12 large basil leaves
2 mozzarella cheeses
Vegetable oil for frying
For the batter:
110 g (4 oz) rice flour
110 g (4 oz) plain (all-purpose) flour
2 heaped tsp bicarbonate of soda
150 ml (5 fl oz) soda water (maximum)
Method:
1. Pick the largest basil leaves. Push one end of a leaf (close to the end) on to a small skewer or cocktail stick (toothpick). Ideally, later you will push the other end of the leaf on to the stick.
2. Push half a tomato on to the stick, followed by a small piece of cheese so that it touches the tomato. Push another half tomato on so that the flesh side of the tomato touches the cheese, then push the other end of the basil leaf on to the stick. Put these into the refrigerator until you are ready to cook.
3. Sift the rice flour, plain flour and bicarbonate of soda into a bowl. Add 100 ml (3½ fl oz) of the soda water and whisk thoroughly. Add a little more of the soda water until you have a smooth batter.
4. Heat the oil in a large saucepan or pot. If you put a cocktail stick (toothpick) in, it should sizzle. Give the cheese and tomato sticks a good even coating of batter and drop straight into the oil with tongs or a slotted spoon for 45 seconds to a minute. This should be long enough to crispen the batter but not long enough to melt the cheese. Serve as they are, or with a dip or salad.
