A less formal dessert presentation, from Warnes Model Cookery and Housekeeping Book (1893 edition).
In recent years a large trade has been developed of repacking into glass fruits which have originally been imported into this country in tins. I refer particularly to pineapple, apricots, peaches and pears . . . The method has arisen in consequence of a prejudice which exists amongst a large proportion of well-to-do people, who expect when they buy these goods in glass they are avoiding all possibility of metallic contact . . . at present a great fraud is being perpetrated on the public, because they are paying twice the price for this food through the deception . . . 75 per cent of the fruit . . . which are exposed for sale in London in glass bottles have been originally packed in tins.13
