For a side dish that practically cooks itself, fill aluminum foil packets with sliced fresh veggies. Top with seasoning salt and 2 ice cubes, seal and bake at 450 degrees for 20 to 25 minutes. Delicious!

Ham & Broccoli Baked Potatoes

Makes 2 servings

2 baking potatoes

1/2 c. cooked ham, chopped

1/2 c. broccoli, cooked and chopped

2 slices American cheese

Garnish: 2 t. green onion, chopped

Pierce potatoes with a fork; microwave for 6 to 8 minutes on high setting until tender. Cut lengthwise and crosswise; press open. Top each potato with 1/4 cup each of ham and broccoli. Top each with American cheese. Microwave an additional minute, or until cheese is melted; garnish with green onion.
