Chicken in crazy water

Serves 4

Crazy water is a classic Italian way to cook fish, but I find it also works really well with chicken. Cook this in summer when you can find the really ripe, tasty tomatoes that are crucial to the success of this dish.

6 large ripe tomatoes

3 large garlic cloves, thinly sliced

2 small fresh red chillies, seeded and chopped

60 ml (2 fl oz/¼ cup) extra virgin olive oil

½ teaspoon sea salt

1 large handful flat-leaf (Italian) parsley leaves, finely chopped

8 small boneless, skinless free-range chicken thighs
