Step one Preheat the oven to 220°C/425°F/gas 7. To prepare the chicken, cut through the joint of each wing, keeping the two meaty pieces and discarding the tip. Set the chicken pieces on a large baking tray, drizzle with olive oil and sprinkle with salt and pepper. Roast for 20 minutes, then reduce the temperature to 180°C/350°F/gas 4 and cook for a further 10 minutes.

Step two Meanwhile, put all of the barbecue ingredients together in a pan over medium heat and let it bubble away for 3–5 minutes to thicken up a little. Taste and add more seasoning if necessary. Remove from the heat and reserve until needed.

Step three Remove chicken from the oven and cover the wings in half of the barbecue sauce. Return to the oven for another 30 minutes.

Step four Meanwhile, mash together all the ingredients for the blue cheese dressing, retaining a few lumps. When the chicken wings are cooked, pour the remaining sauce over them and toss so that they become sticky. Serve the wings with the celery sticks and the blue cheese dressing.
