• 50g icing sugar
• A little sachet of vanilla sugar or few drops of vanilla essence • 100g dried figs
• 100g walnuts
• Rind of 1 lemon
Chop walnuts and figs into 2-3 mm pieces, mix all ingredients and roll into a ‘sausage.’ Allow to dry, then slice and make little balls of each slice in your hand, roll in some extra caster sugar, place into individual paper cups or place them all onto a plate for ‘petit four’ or a little snack for visitors.
• 150g flour
• 150g sugar
• 60g sultanas
• 60g walnuts
• 60g dried fruit
• 5 egg yolks
• 3 egg whites
Blend the egg yolks with the sugar then 100g flour; beat the whites and add, finally chop and mix all the additional ingredients with 50g flour and blend in. Bake in a moderate oven. Optionally, it is possible to cover it with a chocolate glaze.
If you slice this cake and bake (dry) the slices on a tray in a cool oven (at about 100°C), it makes a lovely crunchy biscuit like ‘biscotti’ to go with tea or coffee.
