Directions:
1. Preheat the main oven to 430 degrees F.
2. In a large frying pan, over moderate heat, heat the oil along with 1½ ounces of butter.
3. Add the onions to the pan, and fry until caramelized and golden, for 15-20 minutes,
4. Next, add the garlic and cook for 60 seconds.
5. Remove the pan from the heat and then transfer the mixture to a bowl, and set aside to cool down slightly.
6. Add half of the bread to a food processor and process to a fine crumb consistency. Tear the remaining bread into small pieces, add along with the crumbs into the bowl containing the onions, and mix through 2 ounces of pistachios, chopped sage, dried apricots, and beaten eggs. Season the mixture with salt and freshly ground black pepper.
7. Transfer the mixture to an 8x12" casserole dish. It is possible to store in the fridge for up to 1 day.
8. When you are ready to bake, place in the preheated oven for 20 minutes, until crunchy on top and golden. Check the stuffing cooking progress after 10 minutes, and if already brown, cover with foil.
9. Melt the remaining butter in a small frying pan, and fry the sage leaves until crisp.
10. Pour the seasoned butter over the stuffing, top with the remaining 1 ounce of pistachios and serve.
