CARDAMOM & PEA BASMATI RICE

1 Wash the basmati rice well under cold running water for 5–8 minutes until the water runs clear, then drain.

2 Heat the oil in a small saucepan, add the cardamom, nigella seeds and turmeric and lightly fry, stirring, until they release their aroma. Stir in the rice, then add the measured boiling water and salt. Reduce the heat to low, cover and simmer for 8–10 minutes until rice is fully cooked.

3 Remove from the heat and stir in the peas.

CORIANDER NAAN

Naan bread is usually made with milk and ghee (clarified butter), so it’s nice to have an easy vegan version, and this is about as simple as bread gets, with no yeast. And it just cooks under the grill in a few minutes. This recipe makes 6 naan.
