2 tbsp of chopped parsley, + extra as desired

1/2 tsp of pepper, black

1/2 cup of torn mozzarella cheese, fresh

Instructions:

Melt the butter in a heavy, large skillet. Add the pancetta. Cook for 4 to 5 minutes until the pancetta has rendered and is starting to brown. Add the onions. Cook for 3 to 4 minutes until the pancetta becomes crisp, and onions are soft.

Cook the pasta using directions on the package. Drain and reserve a cup of cooking liquid.

Add miso and reserved pasta cooking liquid to the skillet. Bring mixture to simmer. Add the pasta. Toss constantly while simmering for 1 to 2 minutes till the sauce becomes glossy and has coated the pasta. Add chopped parsley & black pepper. Toss again, coating pasta well. Use mozzarella and extra parsley to garnish, then serve.
