Peanut butter creamy potage
The peanut butter added in a soup or potage of course will add a very unique flavor. It will also add a nice texture, allowing you to create a creamier soup without using heavy cream. Pumpkin, squash and sweet potatoes marry very well with peanut butter when making a soup, just remember that.
Servings: 4
Preparation time: 30 minutes
Ingredients:
• 1 Tbsp. peanut oil
• 1 medium chopped sweet onion
• 2 cups unsweetened pumpkin puree
• ½ cup creamy peanut butter
• 4 cups turkey broth
• Pinch nutmeg
• Salt, pepper
Method:
Heat in a small skillet the peanut oil and cook the sweet onion for 7 or 8 minutes.
Add the turkey broth to the onions and keep it on medium heat.
Add the peanut butter and the nutmeg next as well as the pumpkin puree.
Do keep it on low temperature for about 20 minutes or so, stirring frequently.
You can place in the blender if you want the onions to be reduced in puree as well. I prefer to serve as is.
Add salt and pepper to taste.
