Schezuan Pork Soup

Serves: 3

Ingredients:

1 tablespoon black vinegar

1 tablespoon soy sauce

1 teaspoon Szechuan peppers, crushed

3 cloves garlic, minced

1 tablespoon peanut oil

1 teaspoon red chili paste

2 cups Bok Choy, chopped

Salt to taste

1 ½ inch piece ginger, minced

½ pound pork shoulder, chopped into chunks

1 ½ cups water

2 tablespoons cilantro, chopped

Method:

Select ‘Sauté’ feature. Add oil. When oil is heated, add ginger and garlic and sauté for 1-2 minutes. Press ‘Cancel’ button.

Add rest of the ingredients except cilantro and Bok Choy and mix well.

Close the lid. Select ‘Soup’ feature and timer for timer for 20 minutes.

When the timer goes off, let the pressure release naturally for 10 minutes after which quick release excess pressure.

Add Bok Choy and a little cilantro and stir. Close the lid and let it sit for 10 minutes.

Ladle into soup bowls. Sprinkle remaining cilantro on top and serve.
