New England Clam Chowder
Boston taverns have been serving the sweet clams from the harbor in a rich, creamy soup since the days of the Revolution, and this dish is just as delicious today. The Instant Pot ensures that the all-important potatoes come out perfectly tender in way less time.
Prep Time: 10 minutes
Cooking Time: 15 minutes
Number of Servings: 6
Ingredients:
â1/2 pound bacon
â1 onion, chopped
â1 stalk celery, chopped
â2 cups clam juice
â1 pound potatoes, cubed
â1 bay leaf
â2 sprigs thyme
â1 pound clam meat
â1 cup cream
â1/2 teaspoon salt
â1/2 teaspoon pepper
Directions:
1.Set the Instant Pot to Saute mode. Add the bacon and cook until most of the fat is rendered. Add onion and celery and cook until onion is translucent.
2.Add clam juice, potatoes, bay leaf, and thyme and enough water to cover.
3.Close the lid and set the cooking time for 5 minutes on high pressure.
4.When steam releases, open the lid and add the clams. Set the pot to Saute mode and cook 5 minutes or until clams are plump and cooked through. Pour in the cream and stir until heated through.
5.Season to taste with salt and pepper.
