Vinaigrette

Combine two tablespoons of extra-virgin olive or cold-pressed, unfiltered canola (rapeseed) oil; one tablespoon water (the water replaces what would normally be a third measure of oil); one tablespoon vinegar or lemon juice; one tablespoon mustard; and fresh herbs. Whisk briskly. The mustard holds the oil and water mixture together. (All recipes for vinaigrette are three to one—my three are two measures of oil and one water, plus one measure of vinegar or lemon juice, which is to say a larger quantity can be made using the same formula.)
