Ingredients

2 tbsp oil, divided

1 lb. boneless beef sirloin steak, cut into thin strips

1 medium onion, thinly sliced

1 medium green bell pepper, thinly sliced

1 (6.9 oz.) package boxed Spanish Rice, or dirty rice

1 1/2 C. water

1 (14.5 oz.) can diced tomatoes, undrained

8 (8 inch) flour tortillas

Directions

1. In a large nonstick skillet, heat 1 tbsp of the oil on medium-high heat and sear the beef for about 3-5

minutes.

2. Transfer the beef into a bowl.

3. In the same skillet, heat the remaining 1 tbsp of the oil and cook the vegetables for about 2 minutes.

4. Transfer the vegetable mixture into the bowl with the beef and keep warm.

5. In the same skillet, mix together the Rice Mix, water and tomatoes and bring to a boil.

6. Reduce the heat to low and simmer, covered for about 25 minutes.

7. Stir in the beef and vegetables and cook till heated completely.

8. Serve in the warmed tortillas.
