Dressing

2 ounces extra virgin olive oil

1 ounce lemon juice

1 teaspoon white wine vinegar

½ teaspoon Dijon mustard

black pepper

Salad

3 ounces arugula

8 ounces cooked smoked salmon fillet

1 peeled and pitted avocado

Directions

1.Whisk together olive oil, lemon juice, wine vinegar, Dijon mustard and black pepper in a bowl until fully combined.

2.Mix arugula, salmon and avocado in a large salad bowl and toss well. Add dressing as desired and toss again to combine.
