Servings: 4-6 burgers

Ingredients:

2 large eggplant

1 red onion, finely chopped

2 garlic cloves

1 cup breadcrumbs

1 teaspoon cumin seeds

1 tablespoon chopped parsley

1 teaspoon chopped fresh mint

Salt, pepper

Directions:

Cut the eggplant in half, sprinkle some salt and pepper and put the halves in a pan. Cook the eggplant in the oven at 240C for 30-40 minutes until soft. Remove from oven and let them cool, then scoop the flesh into a bowl. Stir in the garlic, cumin seeds, parsley, mint, onion and breadcrumbs. Season with a pinch of salt and pepper and refrigerate the mixture for 1 hour.
