DIRECTIONS

Cook the pasta al dente or firm to the bite. Sauté the mushrooms in hot oil while the pasta is boiling, seasoning with salt and pepper, until mixture is golden brown. Stir in the garlic and vinegar and cook for 1 minute then add the peas and the broth, simmering for 3 minutes. Drain pasta and add to the mushroom mixture then remove from heat. Combine mustard, oil, vinegar and radicchio until well blended then toss with the pasta and parmesan to coat. Serve.
