Spread the cooled custard into the tart case.

Place the cooked apple slices on top.

3.

Cover the apples with latticed pastry.

4 granny smith apples

squeeze of lemon juice

5 g (3/16 oz) butter

¼ teaspoon ground cinnamon

Apple preparation

Peel, core and quarter the apples then slice them into wedges about 8 mm (3/8 inch) in thickness. Place the apple immediately in a bowl of water with a squeeze of lemon juice to stop them browning.

Melt the butter in a large frying pan over medium heat. Drain the apple slices and add them to the pan with the ground cinnamon and sauté for 8–10 minutes or until tender.
