MAKES 12 TO 16 SERVINGS
When I bake a cake like this in a big rectangular pan, I start cutting small pieces as soon as the cake comes out of the oven. After all, I have to see how it tastes when the chocolate is warm and soft, then when the cake starts to cool and the crumbs begin to get crisp, and then when the pears cool a bit and the chocolate starts to firm up. It is always a big surprise when I see how much I have eaten. Luckily, this is a big cake, and there is plenty for others, too.
Mixing time 15 minutes
Baking 325°F (165°C/gas mark 3) for about 55 minutes
