WARM PASTA CAESAR SALAD

This Caesar salad recipe adds pasta but keeps it classic with the usual Parmesan, anchovies and bread elements.

120g pancetta, thinly sliced

80g Parmesan, finely grated

1 garlic clove

zest and juice of 1 unwaxed lemon

4 egg yolks

5g flat-leaf parsley, finely chopped

6 anchovies, chopped

1 tablespoon Worcestershire sauce

30g panko breadcrumbs

1 tablespoon sunflower oil

300g fresh malloreddus or gnocchi

4 leaves Romaine lettuce, finely shredded

sea salt and freshly ground black pepper
