MAKE SCALLOPS

Dry scallops completely using a paper towel then cover tops and bottoms with Cajun seasoning.

Heat a 12-inch sauté pan over medium-high. Melt butter until it foams and turns lightly brown, being careful not to scorch.

Place scallops flat side down in melted butter and cook for 1 to 3 minutes. Flip when the bottom is seared and the seasoning has created a light crust. Cook the other side to the same sear. Note: Be careful not to overcook scallops. The inside should change from a milky translucent appearance to white with a firmer texture.

Set scallops aside while making sauce.

MAKE BLACKBERRY SAUCE

Reduce heat on sauté pan to medium. Add butter and let melt. Add shallots and bay leaf then sauté until they are light brown. Add white wine to deglaze pan and cook for 30 seconds then remove bay leaf. Add Blackberry Preserves. Lightly stir until sauce is hot and begins to bubble. Remove from heat then add salt and pepper.

PLATING

Place scallops on serving plate. Top each scallop with 2 tablespoons of sauce. Garnish with chives, green onion, or parsley.
