Buttermilk Rye Bread

Buttermilk gives this bread an awesome richness that is lacking in many rye breads.

Ingredients

1/2 cup lukewarm water

1/2 teaspoon sugar

1/2 tablespoon instant yeast (not rapid rise)

3/4 cups buttermilk

1tablespoon butter

1 teaspoons salt

1 cup rye flour

3 cups all-purpose flour

Instructions

1. Combine all ingredients in a large bowl. Mix until it forms a dough.

2. Knead by hand for 10 minutes.

3. Grease a large bowl. Put dough in bowl and cover with oiled plastic wrap. Let sit until double in size.

4. Preheat oven to 400 degrees.

5. Line a cookie sheet with parchment paper.

6. Punch dough down and divide in half. Form each half into a round loaf.

7. Place dough on parchment lined cookie sheet.

8. Let rise until double in size.

9. Cut four slits in each loaf with a razor blade.

10. Bake for 25 minutes.
