Basil Pesto

– 2 cups (25g) fresh basil

– 1/2 cup (125ml) olive oil

– 1 cup (180g) soaked pine nuts (pistachios or walnuts)

– 6 cloves (18g) garlic, peeled

Combine the basil, olive oil, garlic, and 1 teaspoon sea salt in a high- powered blender. Blend on high until a green basil emulsion forms. Add in nuts and continue blending on high until well combined. Pesto will keep for up to 14 days in the refrigerator.
