72. Keto Brownies

Ingredients

3/4 cup cocoa powder

1/2 teaspoon baking soda

2/3 cup coconut oil, divided

1/2 cup boiling water

1 cup stevia sugar substitute (such as Truvia®)

2 eggs

1 1/3 cups almond flour

1 teaspoon vanilla extract

1/4 teaspoon salt

Direction

Set an oven to preheat to 175°C (350°F). Use coconut oil to grease an 8-inch square pan lightly.

In a bowl, whisk together the baking soda and cocoa powder, then add boiling water and 1/3 cup of coconut oil; stir until well combined. Add eggs, stevia and leftover 1/3 cup of coconut oil, then combine well. Fold in salt, vanilla extract and almond flour into the batter.

In the greased pan, pour the batter.

Let it bake in the preheated oven for 30-40 minutes, until the edges start to pull away from the pan’s sides and the top becomes dry. Allow it to cool prior to slicing into 12 squares.
