5 to 6 cups cauliflower, cut into 1- to 1½-inch florets

Salt, to taste (optional)

Ground black or white pepper, to taste

2 cups cooked navy beans

2¹⁄₃ cups low-sodium vegetable broth, divided

1 tablespoon fresh lemon juice

Pinch of nutritional yeast

4 to 5 shallots, finely diced

2 teaspoons minced fresh thyme leaves (about 4 sprigs)

1 cup quinoa

½ cup chopped fresh flat-leaf parsley

Preheat the oven to 400ºF (205ºC). Line a baking sheet with parchment paper.
