Place grated cucumber between paper towels for 20 minutes to absorb extra moisture, then pat dry.

In a bowl combine drained yogurt and cucumber with remaining ingredients and mix well. Cover and refrigerate. Serve at room temperature.

Makes about 2 cups

Note: To drain yogurt, place in a sieve lined with a coffee filter over a deep bowl in the refrigerator for several hours or overnight.

Broiled Lamb Chops with Dijon-Mayonnaise Topping

SERVES 4

Lamb seems to suggest a spring dinner, however it is generally available all year round. Serve with Couscous with Pine Nuts, Minted Carrots garnished with mint leaves, and Citrus-Nut Cake for dessert.

DIJON-MAYONNAISE TOPPING

1/3 cup light mayonnaise

2 teaspoons Dijon mustard

1 tablespoon finely chopped fresh rose-mary, or 1/2 teaspoon dried rosemary, crumbled

1 clove garlic, minced

1/4 teaspoon salt

Freshly ground pepper to taste

8 lamb chops, 1 to 11/4 inches thick
