2 tablespoons olive oil

4 cloves garlic, minced

4 cups beef broth

1 tablespoon Grill Mates Montreal Steak Seasoning

½ teaspoon kosher salt

¼ teaspoon cayenne pepper

½ teaspoon freshly ground black pepper

½ teaspoon ground cumin

1 teaspoon dried parsley

1 teaspoon dried basil

12 pearl onions, peeled

2 cups baby carrots

10 baby red potatoes, cut into quarters

One 16-ounce package petite frozen peas

1. Preheat the oven to 350°F.

2. Rub the 1 cup flour onto all sides of the roast, brushing off any excess. In a large, heavy, ovenproof pot, melt the 2 tablespoons butter with the olive oil over medium-high heat. Add the meat and brown well on all sides. Add the garlic and cook for 1 minute. Add the broth, steak seasoning, salt, cayenne, black pepper, cumin, parsley, and basil. Bring to a boil, cover, place in the oven, and bake for 1½ hours.
