Boulangère Potatoes

‘Pommes Boulangère’ or ‘potatoes from baker’ is the French version of scalloped potatoes in which the slightly browned potatoes are slow cooked with stock and caramelized onions to make a dish that melts immediately in your mouth when taken in. Since they are slow cooked, the potatoes are able to soak up all the goodness of the stock and mellowed sweetness of the caramelized onions to cook up a dish that is creamy and soft inside while being crispy and golden on the outside. With their pretty layers and distinctive taste, they can be served along with any roast dishes. They get their name since in the olden times, they were given to the local baker to bake in the bread oven to cook slowly.

Yields: Makes 6 Servings

Ingredients

3 ½ pound Desiree Potatoes, peeled and thinly sliced

2 Onions, peeled, halved and thinly sliced

1 ½ cup organic Vegetable Stock

1 knob Butter

1 large handful of Parmesan Cheese, finely grated

A few sprigs of fresh Sage, leaves picked and finely sliced plus some whole leaves

Sea Salt

Freshly ground Black Pepper
