Though we adore the chicken empanada described in this story, it is a serious labor of love. Making it with good-quality canned tuna saves a lot of time, but it’s still more of a weekend venture than a weeknight dinner. Since Galicia is a region known for its incredible seafood, using tuna in place of chicken is both delicious and appropriate. This recipe is based on José Andrés’s astonishing empanada, but we have changed it over the years as we continue to make this for the people we love.
