Preparation:
Preheat the oven to 400°F.
Toss carrots and parsnips with 2 tablespoons of oil, 1 teaspoon of thyme, and ¼ teaspoon of salt and pepper in a large mixing bowl.
In a roasting pan, evenly distribute the ingredients. Rub the remaining 1 tablespoon of oil over the pork and season with the remaining 1 teaspoon of thyme and ½ teaspoon of salt and pepper. Place the pork on top of the vegetables, fat side up.
Roast, stirring occasionally, for 50 to 65 minutes, or until an instant-read thermometer inserted into the thickest part of the pork registers 145° F.
