ASPARAGUS & LEMON RISOTTO

Ingredients

LIGT & FRESH!

•2 tbsp olive oil

•1 onion, chopped

•2 garlic cloves, crushed

•300g/11oz risotto rice

•750ml/3 cups hot vegetable stock

•200g/7oz asparagus tips, chopped

•2 tbsp lemon juice

•Salt & pepper to taste

Method

1Heat the olive oil in a high-sided non-stick frying pan and gently sauté the onions & garlic for a few minutes until softened.

2Add the rice and combine well to coat each grain in the oil. Add a ladleful of stock, stir well and simmer. Repeat until all the stock has been absorbed and/or the rice is tender (add more stock if needed). This should take 15-20 minutes.

3When the risotto is almost ready plunge the asparagus into a pan of boiling water for one minute. Drain and add to the risotto.

4Stir through the lemon juice, season really well and serve.

CHEFS NOTE

Shaved parmesan cheese & rocket leaves make a good addition to this simple risotto.
