Instructions
1. In a pot, boil some water and add some salt to it. Once the water starts boiling, add the Ravioli pieces and then let it cook for 5-6 minutes. After it is cooked, take it out from the pot with a slotted spoon and keep it on a plate.
2. In another skillet, add some olive oil. Once the oil is hot enough, add the onions and some salt and black pepper to it and stir it nicely. Keep cooking the onions till they become a light golden brown in color.
3. Once the onions change color, add the whipped cream cheese and the mustard. To it, slowly start adding the mushroom gravy and mix the contents nicely. Cover with some lid and let the gravy simmer.
4. Occasionally, stir a little to ensure that the gravy doesnât stick to the skillet. If it becomes too thick, add some reserved pasta water to it. Once the sauce is creamy and has a nice texture, remove it from the heat.
5. Add some of the chopped parsley to the sauce and stir it. Add the sauce over the plate of cooked mushroom Ravioli and finally garnish with the remaining parsley. Voila! You have in front of yourself a delicious plate of vegetarian Ravioli stroganoff!
