One-pan meals are so easy to make … and there’s minimal washing-up, too. Chicken is a good way of getting lean protein but the sweet potatoes, asparagus and onions are also helpful in increasing the protein content. Serve with some fine green beans or spinach and you’ll boost the protein levels even more.

1 Preheat the oven to 190°C, 375°F, gas mark 5.
2 Heat the olive oil in a large roasting tin (pan) set over a medium heat on the hob. Add the chicken and cook for 8–10 minutes, turning occasionally, until browned all over.
3 Add the red onions, sweet potatoes, asparagus and tomatoes. Pour the stock over, sprinkle with the balsamic vinegar and thyme and season with salt and pepper.
4 Roast in the oven for 30–40 minutes until the chicken is cooked through and the vegetables are tender.
5 Serve sprinkled with chopped parsley and drizzled with balsamic glaze.
