MAGGOT CHILI

Serves 4

BRAINS! BRAAAINS!

That’s all us zombies ever eat. Brain butter, brain burgers, brain bourguignon, brain-battered biscuits . . . YUCK!

I’m more of a down-to-earth kind of guy. Plants, bugs, dirt, worms . . . I’ll grab anything that’s crawling around my casket when I rise from the grave.

That’s why I came up with this recipe for vegetarian Maggot Chili. It’s chock-full of beans and veggies and topped with a handful of maggots. Deliciously brain-free, just how I like it. Don’t panic if you can’t find any maggots in your grave. Any bug or worm will do—you can even use some maggoty-looking pasta if that’s all you can dig up!

INGREDIENTS

2 tablespoons extra virgin olive oil

1 cup (110 g) chopped yellow onion

½ cup (50 g) chopped celery

1 cup (140 g) chopped carrot

½ cup (75 g) chopped red or green bell pepper

Salt and pepper to taste

2 cloves garlic, chopped

1 teaspoon chili powder

1 teaspoon ground cumin

1 teaspoon paprika

1 teaspoon dried oregano

1 cup (145 g) cooked corn kernels

1 (28-ounce/793-g) can diced tomatoes, with juices

1 (15-ounce/425-g) can black beans, drained and rinsed

1 (15-ounce/425-g) can pinto beans, drained and rinsed

2 cups (480 ml) vegetable stock or water

½ cup (70 g) orzo, cooked according to package directions (about ¼ cup/42 g uncooked), for maggot garnish

STEPS

1 Heat the oil in a large pot over medium heat. Add the onion, pepper, carrot, celery, and a pinch of salt. Cook for 8–10 minutes, stirring occasionally, until veggies are softened.

2 Add the garlic and spices and cook for 1 minute, stirring constantly.

3 Add the corn, tomatoes, beans, and vegetable stock or water. Stir to combine and bring to a simmer. Cook at a gentle simmer for 30–35 minutes, until most of the liquid is absorbed. Season to taste with salt and pepper.

4 Spoon the chili into bowls. Top with a handful of orzo (or maggots if you found any!) and dig in!

Now doesn’t that look so much tastier than a bowl full of brains?

ADAM BOMB’S TIP

If you prefer a gluten-free maggot meal, substitute cooked white rice for the orzo!
